ABUELITA JESSIE’S CORN COOKIES

The next recipe is from Carola’s grandmother. (In the “non-literary” world, it’s one of my mother’s recipes.

(Makes 36)

4 ozs. butter, room temperature (1 stick)

3/4 cup sugar

1 1/2 cups flour

1/2 cup cornmeal, fine or medium grind

1/2 tsp. baking powder

1/2 tsp. salt

1 tsp. nutmeg

1/2 cup milk

1 egg

1/2 tsp. vanilla

Lightly grease two cookie sheets. Preheat the oven to 375 degrees.

Cream the butter and the sugar. Combine all the dry ingredients. Combine the milk, egg, and vanilla. Combine the wet and dry ingredients. Drop by spoonfuls 1-inch apart on the cookie sheets. Sprinkle cookies with sugar. Bake for 12 to 15 minutes. Cool on a rack.
