ABUELITA PALOMA’S GINGERSNAPS

(Makes 60)

4 ozs. unsalted butter, room temperature (1 stick)

1/2 cup granulated sugar

1/4 cup molasses

1 1/2 tsp. ginger

1 tsp. cinnamon

1 tsp. cloves

1/8 tsp. salt

1/2 tsp. baking soda

1 3/4 cups flour

Preheat the oven to 325 degrees.

Beat butter in a bowl until it is light. Slowly add sugar. Beat in the molasses. Mix the spices, baking soda, and salt together and beat in. Add the flour ¼ cup at a time. Mix thoroughly after each addition. Chill the dough for several hours. Form the dough into a roll and cut with a sharp knife into 1/8 inch thick slices, or roll out on a lightly floured board to 1/8 inch thick and cut with cookie cutters. Bake on a lightly greased baking sheet for about 8 minutes, or until golden.

Note: These will burn easily.
