APPLES WITH DUNFILLAN CRUST

Anne made this cobbler the first time she cooked for Jack (in Quest for the Ivory Caribou), though she made it with peaches instead of apples.

(Serves 4)

FILLING

5 cups tart apples

1/3 cup sugar

2 Tbsp. flour

cinnamon

pinch of salt

butter

 

CRUST

1/2 cup flour, unsifted

1/2 cup sugar

1/2 tsp. baking powder

1/4 tsp. salt

1 oz. butter (1 Tbsp.)

1 egg

 

Preheat the oven to 375 degrees. Grease and flour a 9”-square pan.

 

Combine the flour, sugar, baking powder, and salt for the crust.

 

Combine the sugar, flour, cinnamon, and salt for the filling.

 

Peel, core, and slice the apples. Add the filling flour mixture to the apples. Place in the pan. Dot with butter.

 

To the crust flour mixture, add the butter (at room temperature), and slightly beaten egg to make a batter. Beat until smooth. Drop in 9 even portions over the apples. Bake for 35 to 40 minutes or until crust is golden. Serve warm with cream.
