These are the pancakes Jack made for Anne.
1 cup whole buckwheat flour
3/4 cup unbleached all-purpose flour
2 tsp. baking powder
1 tsp baking soda
1/2 tsp. salt
1 egg
2 Tbsp. molasses
2 cups heavy cream or 2 cups buttermilk plus 1 tbsp. melted butter
2 apples
Combine the dry ingredients. Combine the wet ingredients. Peel, core, and grate the apples. Stir them into the flour mixture. Combine the dry and wet ingredients. Stir just until the dry ingredients are thoroughly moistened.
Let the batter rest for 10 to 15 minutes. Heat your griddle or pan. When a drop of water skitters across the pan when dropped on it (350 degrees on an electric skillet), the pan is ready. If the water evaporates quickly, the pan is too hot. Drop the batter by spoonfuls and cook until the edges begin to look dry. Turn the pancakes and cook until done.
These are good rewarmed with a little butter.
