CAROLA’S QUICK QUESADILLAS

This quick snack is one of Hal’s favorites.

 

For each serving:

1 flour tortilla

thin slices of Monterrey Jack cheese or other cheese that melts well

oil

salsa (optional)

 

On medium low heat, warm one side of the tortilla until it just begins to bubble up. While it’s warming, brush the up side generously with oil. Turn the tortilla over. Place the cheese on the up side and add a line of salsa across the middle if desired. Fold the tortilla in half. Sauté on one side until golden brown. Turn it over and sauté the other side until also golden brown. The goal is to get it crispy without burning it. This can be drippy to eat. Be sure to have napkins or paper towels.

 

Serve with black olives, radishes, salsa and/or pico de gallo.

 

Pico de gallo: mix diced tomato, diced onion, chopped cilantro, and lime juice. Add garlic, Jalapeno pepper, and salt to taste.
