(Serves 6)

1/2 cup flour

2/3 cup cornmeal

1/4 cup sugar

1/2 tsp. salt

1/2 tsp. baking soda

1 cup buttermilk or sour milk

1/3 cup butter (2/3 of a stick)


Preheat the oven to 400 degrees.


Combine the dry ingredients. Mix in the milk. In the oven, melt the butter on a jellyroll pan or other shallow pan. Pour in the batter. It will be free-form. Don’t try to make it fill the pan. Bake for 15 minutes. Eat hot. You can bake this is a cast-iron pan or any other oven-safe pan. It will taste good, but it won’t have as much crispy buttery edge.
